Watch- Water Chestnuts: A ‘Cholesterol and Fat Free’ Winter Delicacy from Kashmir’s Waters

Spiky, nearly triangular water chestnuts are the prime crop for Kashmiris who dwell near the Wular Lake- Asia’s biggest freshwater bodies.

The locals leave around dawn and start collecting the nuts with darkish brown casings from the Lake. The nuts are then collected, taken home and dried in the sun until they may be crispy and white. Then the nuts are taken for winnowing and eventually they get ready for market.

Water chestnuts can also be ground into flour and then used by diabetic sufferers, due to the fact it is free from both cholesterol and fats. The nuts are used on fasting days by Kashmiri Hindus when they’re forbidden from eating cereals and pulses.

The shells are used as cooking gasoline. Some researchers are even investigating whether the fruit has cancer-preventing houses.
